Cook it right.
Best for: Charcoal grill · Flat-top or pan
- 01Cook straight from the fridge — cold patties hold together better.
- 02Salt the outside just before cooking.
- 03Grill 3–4 minutes per side over high heat. Flip once and don't press them.
- 04Add cheese for the last minute.
Rest 1–2 minutes, toast the buns while you wait.
Tip: Make a small dimple in the centre of each patty so it stays flat.
